The Terratico Bibbona DOC is produced in the municipalities of Rosignano Marittimo, Cecina, Bibbona and Collesalvetti all in the province of Livorno. The different types are produced: Red also Superior, White, Rosé, Sangiovese, Merlot, Cabernet Sauvignon, Syrah, Trebbiano and Vermentino.
The Terratico Bibbona DOC Rosso is produced with Sangiovese and Merlot, each representing not less than 35%, with the addition of grapes from other red grape varieties recommended and authorized by the Province of Livorno. If for the type, so to speak, "Basic"the disciplinary does not provide compulsory aging times, for the production of the Superior it provides for at least 18 months of aging, 12 of them in wooden barrels, in addition to an alcohol content slightly higher (13 vol% against 12.5% by volume of the "basic"). In the glass we find a wine with a ruby red color, intense and vinous aroma, and taste dry, full and harmonious, while the Superior tends to have more intense characteristics of color slightly tending to garnet, intense aromas, wide and elegant flavor warm and full-bodied, with hints of wood due to aging. On the table the two wines are served with starters and main dishes of red meats, roasted or grilled, and seasoned cheese: the "base" is also indicated for the starters of cured meats, cheese or vegetables, while the Superior is more suited to more elaborated dishes such as stewed meats.
The mono-varietal red wines Terratico di Bibbona DOC are obtained, as mentioned, from the vinification of Sangiovese, Merlot, Cabernet Sauvignon and Syrah, present in the blend in a percentage of not less than 85% with the possible contribution of other grape from red berry grape varieties recommended and authorized by the province of Livorno.
- Sangiovese
The Terratico di Bibbona DOC Sangiovese comes to the tasting of a fine ruby red color, tending to orange red with aging, intense aroma, vinous and dry flavor, elegant and harmonious. On the table is used paired with mixed starters of croutons, cured meats and cheeses, pasta and red meat dishes, soups, mushrooms and seasoned cheese.
- Cabernet Sauvignon
The Terratico di Bibbona DOC Cabernet Sauvignon is a wine with a variable color between red ruby and garnet, intense aroma, spicy and characteristic and flavor dry, full and harmonious. Suitable for the most important course is served with first and second dishes, also elaborated in red meat or wild game, but also with mushrooms and seasoned cheese.
- Merlot
The Terratico di Bibbona DOC Merlot comes in the glass of a nice living garnet red, sometimes with some purple hues, tending to reddish orange with aging, intense aroma with clear notes of berries and full flavor, dry and harmonious. Wine, elegant and sensuous, is served on table with important dishes, also elaborated, of red meat, pork or game. Also excellent with mushrooms and hard cheeses.
- Syrah
The Terratico di Bibbona DOC Syrah shows in the glass a beautiful color ranging from the garnet and ruby red, tending to reddish orange with aging, intense and spicy, with notes of red berries and taste dry, full and harmonious. On the table is the ideal pairing to not too complex dishes, but rich in flavor: excellent with stewed meats, is perfect with great roasts of meat or game.
The Terratico di Bibbona DOC Rosè is obtained from the same blend of red, the only difference being that in this case, the maceration on the skins is reduced to a few hours, in order to extract color and tannins only partially. In the glass we find a wine by the color pink, fruity aroma, fine and delicate and dry flavor, delicate and harmonious. Good wine for a an aperitif other than usual, on the table is served with mixed starters of cured meats or matured cheeses, soups and vegetable soups, vegetable risotti and light main dishes of white and red meat.
The Terratico di Bibbona DOC White is produced with at least 50% of grapes Vermentino, with the addition of grapes from other white grape varieties recommended and authorized by the province of Livorno, as a percentage not exceeding 50%. In the glass we find a wine with a pale yellow color, soft and delicate bouquet and taste dry and harmonious. Excellent as an aperitif on the table can be served with delicate dishes of fish or seafood, even though gives its best with shellfish.
Monovarietal White wines Terratico di Bibbona DOC are produced, as mentioned, with Trebbiano and Vermentino necessarily present in the blend for at least 85%, possibly with the addition of grapes from other white grape varieties recommended and authorized for the province of Livorno.
- Trebbiano
The Terratico di Bibbona DOC Trebbiano comes in the glass of a lovely pale yellow color, soft and delicate bouquet and taste dry and harmonious. Excellent served as an aperitif, pairs well with appetisers and main courses based on fish or seafood, vegetables and fresh cheese.
- Vermentino
The Terratico di Bibbona DOC Vermentino comes in the glass of a lovely pale yellow color, fruity aroma, fine and delicate and dry and harmonious taste. Ideal as an aperitif with friends, is the perfect wine for pairings with aromatic dishes of fish, seafood and especially shellfish. Good pairing with dishes of vegetables and fresh cheese, it is better if you avoid the dishes too rich in tomatoes, especially raw.
