Vinification

Cuvée Annamaria Clementi is the result of the pursuit of excellence both in the vineyard and the cellar. Base wines are obtained exclusively from the alcoholic fermentation of musts of first choice (about 40% of the weight of the grapes) that takes place directly in small oak barrels, where it aged for about 8 months. No compromise, no concessions, only the best base wines, at least 10 different lots, are then assembled to give rise to this unique cuvée.

Maturing

The long Maturing in the bottle, in contact with yeasts in the underground cellar at a constant temperature of 12 ° C, determines the unique profile: a Franciacorta absolute.
