Vinification

The grapes are collected in boxes of 25 kg and run on the same day to pressing; is immediately added the selected yeast to the start the fermentation.

This lasts 10 days with frequent and short pumping to give the wine a touch of freshness and lightness, but at the same time keep its fruitiness, and characterize a barbera original.

Maturing

up to 24/36 months after purchasing.

Color: Light straw yellow

Bouquet: Virile, very intense and pronounced.

Taste: Dry, mature, good strength and harmony, with long and aggressive finish.

Distillation

the pomace (skin + seeds) along with the funds of fermentation (yeast that have made the alcoholic fermentation) are distilled to the rules of art to obtain a fine and delicate grappa;

It initially remains in a steel tank and is then aged in small barrels to catch the maximum of fragrances and flavorings.
