Vinification

The grapes are collected in boxes of 25 kg and sent the same day to be pressed, the selected yeast is immediately added for the start of alcoholic fermentation.

This lasts 10/12 days with frequent and long pumping to extract from the peel all the noble substance useful to aging.

Maturing

up to 24/36 months after purchasing.

Characteristics

Color: intense ruby red, with garnet tones over the years

Bouquet: Characteristic, spicy, persistent.

Taste: Dry, harmonious, well structured with a slight acidity that goes well with a slightly bitter aftertaste, good persistence.

Ageing

After malolactic fermentation is put to rest in 25 hl oak barrels.
