Vinification
Traditional white, with a short maceration of the skins on part of the grapes (30-40%). Fermentation takes place in steel at 18 ° C, with the help of selected yeasts. The wine is racked, with added SO2 to prevent malolactic fermentation, and leave it resting on the soft lees for about 3 months. Characteristics

Adjacent to the hazel grove of Relanghe, at around 600 meters of altitude and on the border of the municipalities of Sinio and Albaretto Torre (hence the name in Piedmontese: Arbarei), Ceretto acquired approximately 3 ha, in order to retrieve a territory made it virtually uninhabited the exodus of the '60s to the valley, in the more profitable Langa. After a series of terraces to limit the slope of the hill, this plot has been devoted to Riesling, the grape variety that, better than anyone else, can positively exploit the considerable temperature difference between day and night, in late summer and early autumn, during the ripening of grapes. |
