Vinification
Occurs at temperatures around 85° F. After a short maceration on the skins for about 7 days, after the fermentation, follows the malolactic fermentation, favored at 65° F. Characteristics
Color: more or less intense red with garnet. Perfume: Flavor: Bouquet: good intensity and persistence with hints of dried flowers Taste: balanced with good acidity Optimal consumption in all years between 4 and 10 years, even up to 15/20, in thousandths excellent. |

Relevant information Barbaresco Asij, such as Barolo Zonchera have a major role in protecting and ensuring the outstanding quality of the wines of Bricco Rocche (Barolo) and Bricco Asili (Barbaresco): indeed, in poorer vintages (2 out of 10 statistically) wine aged in the two companies of Castiglione Falletto and Barbaresco, which are considered not sufficiently fit to carry the diction of the crus, are assembled with these two base wines. |
