Vinification

The base wine is made, in varying percentages, from Chardonnay and Pinot Noir, the grapes are produced entirely in the estate Monsordo-Bernardina, just outside of Alba.

The two wines are fermented separately and aged in steel and proceed to cut just before the tirage, which takes place in April following the harvest.

Characteristics

Perlage: At first glance has a consisting foam with the correct fading and a very fine and continuous perlage

Color: beautiful yellow color with green reflections

Bouquet: rich and varied, with very nice notes of yeast and toasted

Taste: full, with good acidity and structure certainly important, that does not prevent a considerable elegance

Maturing

After the second fermentation the wine remains on yeasts for at least 36-48 months before being subjected to the operations remuage, disgorgement and dosage.
