The Winery The winery "Colombaio" occupies a rocky hill that gently slopes towards the lake of Candia, at an altitude of 260 meters above sea level. The soil is morainic, stony, full of sand and silt and quite acid. Since the fourteenth century the "Colombaio", whose name (Pigeon House) recalls the old station of homing pigeons, was owned by Count Valperga of Candia from which follows the current owner Massimo Luigi Pachié of Candia and Castiglione. The vineyard, with an area of nearly four acres, is now grown in to Erbaluce in the traditional "pergola Canavesana" once known as "alten". "Integrated" cultivation, as cultural practices, is adopted with the objective of high qualities, respect for environment and human health. Yield of production is kept low (usually less than 50% of permitted yield) and this is the first secret of a quality still unrivaled. The grapes used to produce "Colombaio Candia" are collected, fully ripe, in boxes usually after 10 October. Grapes processing is immediate and very soft to ensure the minimization of stress from crushing. The cellar is organized with an air conditioned environment that helps ensure optimal conditions for the natural course of biological and physical-chemical processes, responsible for the formation and stabilization of wine. For this and for the high quality of work, like in country tradition, it is not necessary to use specific products for filtration and stabilization, limited to the very time of bottling. Thus they support the growth of bottle quality over time, and improve health and nutritionals value of wine. |
