Overview

Feotto dello Jato winery is located in the heart of a territory that has a thousand year-old tradition in wine making: the Jato Valley. The persistence of this tradition is the main point of Feotto dello Jato philosophy, that is, as argued by the partners, the union of Roots and Innovation.

The seven partners, winemakers and technicians, have been handed down the passion for the vineyard. They manage their own estates with passion and devotion and follow each production phase, from planting to harvesting, which is strictly made by hand.

Innovation, indeed, is not a synonym of artificiality or manipulation, but it means tradition recovery in modern terms, through experimentation: small batch fermentations, for example, let us study the best environmental conditions for the vine growing and it let us evaluate potentialities of different estates and aim at more functional varietal choices.

This strategy has led us to important oenological results. The constant characteristic of our work is to produce unique wines which are at the same time simple and indissolubly bound up with tradition and its values: the natural quality of our products and the environmental respect materialize thanks to the organic agriculture of grapes used for our wines production. The great commitment expresses our love for our land and our roots:

Feotto dello Jato daily challenges focus on the promotion and protection of quality, through a powerful support to Monreale D.O.C. and the enhancement of native varieties. Our great determination towards the returning to our roots in wine making has allowed us to be the only Sicilian winery which produces a 100% Perricone, a native variety which is bound to the wine tradition of this territory.

The winery

Feotto dello JatoFeotto dello Jato winery is in the territory of San Giuseppe Jato, a little town 24 km south of Palermo.

The winery, recently built, has the typical architecture of old storehouses of this area with raw stone exteriors and pantile roofs, in order to create a certain harmony with the natural environment. Inside the building there are hoppers for the grapes discharge, two crusher-destemmers and a pneumatic membrane press.

The fermentation vats, which have been built according to the oenologist’s instructions in order to improve anthocyanic and polyphenolic extraction, and stainless steel tanks, they are all temperature controlled and have a little capacity (15.000, 5.000, 2.500 and 1.000 litres).

There are also 20.000 litre cement tanks, used for the maturation of red wines, and a beautiful barrique cellar, where the excellent wines mature in American and French Allier oak barrels and 600 litre French oak tonneaux. The barrique cellar in has a capacity of 12.000 litres.

The winery has a total capacity of 85.000 litres. A modern bottling and packaging line (2,000 bottles per hour) complete the well organized structure of the winery. It has a current productive capacity of about 250,000 bottles. Our aim is to achieve 500,000 bottles produced, in order to improve and enhance Feotto dello Jato’s production.
