soft pressing (drying of grapes on the plant then completed in the withering store), long fermentation of 45 days. stainless steel (temperature controlled)

Bouquet: complex, intense, aromatic, spicy, floral and fruity (dried fruits, jam)

Taste: sweet, soft, fruity, fresh and full. Remarkable balance acidity / sweetness.

Food pairings

dry pastry (biscuits, cake with almonds or nuts, fruit tarts) and long and medium maturing blue cheeses (Cambosana, Gorgonzola, Bleu d'Aoste, Blue Stilton, Fontina).

Notes: grapes for this wine are harvested late, in several steps, in order to select only the clusters that have reached the correct degree of ripeness.

The wine is named for the remarkable sweetness of these grapes, whose are preferred destination of the bees ( "abeilles" in French), which are delicious.
